The beginning of a meal is always perfect.
It starts beautifully plated, you eat slowly (or quickly) while taking mental notes of favorite flavors and interesting textures. As you near the the end, you’ve saved all the best parts for last. It’s no longer the work of art you started with but it’s almost always the most memorable part of a meal.
The Last Bite is the imperfect perfect bite.
Sometimes it is meant to be shared. It’s an act of affection, a symbol of love. (Anyone else remember this from Deliver Us From Eva?)
This blog is dedicated to my family, friends, mentors and colleagues who have continuously through the years pushed me to start this.
